Mouthwatering Monday ~ Breakfast for Dinner

Breakfast for dinner is not something we did growing up, but Monroe's family did it a lot. I am not a big fan of breakfast for dinner, but when my mother in law makes her pancakes I am there in a jiffy! Here is her recipe.

Gretchen's Buttermild Pancakes:

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3 Tbsp. sugar
  • 2 eggs
  • 3 cups buttermilk
Preparation:

Heat griddle to 375. Whisk flour, baking powder, baking soda, salt and sugar in a bowl. Add eggs and buttermilk. Whisk to combine. 

Butter griddle. Pour about 1/3 cup batter onto griddle in pools, about 2 inches apart. When pancakes bubble and are slightly dry on top, flip. Cook until golden on bottom.
