I along with 8 other ladies have joined forces to bring you this exciting weekly linkup. Every week we will have a theme to follow. Breakfast for dinner is not something we did growing up, but Monroe's family did it a lot. I am not a big fan of breakfast for dinner, but when my mother in law makes her pancakes I am there in a jiffy! Here is her recipe.
Gretchen's Buttermild Pancakes:
Ingredients:
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 Tbsp. sugar
- 2 eggs
- 3 cups buttermilk
Preparation:
Heat griddle to 375. Whisk flour, baking powder, baking soda, salt and sugar in a bowl. Add eggs and buttermilk. Whisk to combine.
Butter griddle. Pour about 1/3 cup batter onto griddle in pools, about 2 inches apart. When pancakes bubble and are slightly dry on top, flip. Cook until golden on bottom.
